Herring layer Salad
This layer salad is a real eye-catcher. It takes about 45 minutes to prepare but it tastes best when it has been left to stand for at least 2 hours. You can also prepare it the day before.
For two people you will need:
2 Herring Fillets
1 Medium-sized Beetroot
1 Onion
2-3 Potatoes
2 Tbsp Pumpkin Seed Oil
3 Tbsp Mayonnaise
Salt
Pepper
Preparation:
Boil the beetroot whole in salt water for 30-40 minutes. In a separate pot cook the potatoes whole. Cut the onions into rings and put them on the bottom of a large bowl. Pour the pumpkin seed oil over them with a sprinkling of pepper. Cut the herring fillets into thin strips and layer them over the onion rings.
When the potatoes and the beetroot are finished peel and grate them into separate bowls. Layer the potatoes over the herring, season them and then add the beetroot. Finally spread a layer of mayonnaise over the top and set it aside until you are ready to serve.
