Crayfish on Fennel in Orange Sauce
A great starter for a dinner.
Here is what you need:
150 g Crayfish
1 Big Fennel
200ml Fresh orange juice
2 Oranges
50 ml Coconut Milk
2 Table Spoons honey
Salt
Pepper
Coconut Oil
Preparation
Clean and trim the fennel. Cut in four pieces. Separate the leaves and fry them on moderate heat in coconut oil. In the meanwhile, boil the orange juice, reduce heat and add the coconut milk. Simmer the sauce until it is reduced to half. Add half a spoon of honey ad season with salt and pepper. Simmer the sauce another 5 minutes. Turn of the heat, add the crayfish and cower the pot with a lid.
Filet both oranges and crystalize them in the rest of honey.
